Blueberry pancakes - Gluten free, grain free, can be dairy free

Pancakes

  • 50 grams Butter, or coconut oil
  • 5 eggs
  • 100 grams Milk, can be any type of milk you like
  • 45 grams sugar
  • 65 grams Coconut Flour
  • 60 grams arrowroot flour
  • 1 teaspoon lemon juice
  • 1 tablespoon baking powder
  • pinch salt
  • 100 grams blueberries

Recipe's preparation

  1. Add butter/oil, eggs and milk and mix 1 min/speed 10 (until light and fluffy)

     

    Add remianing ingredients except blueberries and blend 10 seconds/speed 5. If mixture looks a little runny add 5 grams more coconut flour or it too thick add a little extra milk. Stir down side of bowl and mix again 5 seconds/speed 5

     

    Stir in blueberries

     

    Heat up fry pan to low temperature and melt some butter/coconut oil or a combination. Pour batter in and place lid on top of pan. (don't make pancakes too big or will be hard to turn over) Lid is very important as helps pancakes become fluffy. Flip pancakes once started to cook through. Pan needs to be on a low heat or they will burn before they cook.

     

    Serve with maple syrup and sliced bananas

Tip

Important to cook slowly and with lid on. They do take a while to cook as need to cook slowly but trust me they are worth it!

    This is a great recipe.  Patience and lid on was a great tip.  They are very light and flavoursome.
