Blueberry Ricotta Crumble

Base & Crumble Topping

  • 200 g SR flour
  • 200 g Almonds raw
  • 150 g raw sugar
  • 180 g Butter
  • 100 g rolled oats

For Ricotta Filling

  • 1 --- lemon, zested
  • 100 g sultanas
  • 500 g ricotta
  • 125 g blueberries

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Base & Topping
  1. Line a slice tin with baking paper

    Heat oven to 180 degrees C 

  2. For Crumble
  3. Place almonds in mixing bowl & mill for 10 seconds/ speed 9

  4. Add remaining crumble ingredients, except for rolled oats, mix for 30 seconds/ speed 3

  5.  

    spoon approximately two thirds of the crumble mixture into the slice tin & press into the base. Add the rolled oats to the remaining crumble mixture in the mixing bowl & mix for 5 seconds/ speed 4.

    Remove from mixing bowl into a separate bowl to use as the crumble topping later

  6. Assembly
  7. Place lemon rind/ (Zest) in Thermomix bowl & grate speed 7 for 10 seconds (optional)

     

  8. Add ricotta cheese & sultanas to the mixing bowl & mix together Counter-clockwise operation 5 seconds/ speed 3. Add blueberries & mix in with spatula.

  9. Spoon all filling into the base, then spread remaining saved crumble on top

  10. Bake for 40-45 minutes. Remove from oven to cool, then put into the fridge for a few hours or until set before serving

    I made this today I only had 375g ricotta so I added 125 of Philly and I used 80 grams of xylitol as im
    diabetic. I used almond meal so skipped the chop almonds part. I also didn't read it correctly and added the oats in so both layers have oats but it turned out great even though I dropped it as I was putting it in the oven and lost a lot of the topping

    Loved it. Used some pecans and pistachios to add to the almonds as I didn't have enough. Also only used 100gms sugar as recipe seemed sweet enough, it was perfect, thanks for sharing
