  • 230 grams flour
  • 190 grams softened butter
  • 1 egg
  • 160 grams sugar
  • 10 grams baking powder
  • 1-1/2 teaspoons vanilla essence
  • 380 grams blueberries, (frozen berries are great in this recipe - leave them frozen until ready to sprinkle over the mixture)

Topping

  • 500 grams sour cream, (NOT lite)
  • 2 egg yolks
  • 100 grams sugar
  • 1 teaspoon vanilla essence

Recipe's preparation

    Cake base
  1. Combine ingredients and mix for 15 seconds on speed 5

    Spread in a greased 25cm loose bottom baking pan

    Sprinkle blueberries evenly over mixture.
  2. Topping
  3. Combine topping ingredients and mix for 10 seconds on speed 5.

    Pour over berries and bake for 1 hour at 175 degrees C or until custard topping is firm and lightly browned.
