  • 115 grams unsalted butter, Softened
  • 55 grams Unrefined Golden Caster Sugar, (can swap for normal caster sugar)
  • 50 grams brown sugar
  • 1 egg
  • 105 grams plain flour
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 60 grams Cornflakes
  • 120 grams dried cranberries

Recipe's preparation

  1. Pre heat oven 175 degrees C
    Add Butter, caster sugar and brown sugar. 30 seconds/ Speed 4, scape down, repeat twice until pale and creamy.
    Add egg, 10 seconds/ speed 4
    Add Flour, vanilla, cinnamon, baking soda, salt. 20 seconds/ speed 3.
    Add cornflakes, cranberries, rolled oats. 10seconds/ reverse/ speed 2.5. Scrape down and use spatula to ensure full combined.
    Place 2 Tablespoons onto a lined tray, flatten slightly. Bake for 12 to 15 minutes or until slightly golden.

Tip

Original recipe from The Worktop.
You can make your own Golden Caster Sugar - simply mill raw sugar 10 seconds/ speed 6 (do about 200g at a time).
