  • 130 grams Mixed Nuts
  • 70 grams dried apricots
  • 180 grams Oats, rolled
  • 30 grams brown sugar
  • 20 grams chia seeds
  • 35 grams coconut oil
  • 1 tsp cinnamon, (or a few decent shakes)
  • 1 tsp salt, (or a few turns of the salt grinder)
  • 1/2 tsp bicarbonate soda
  • 1/2 tsp baking powder

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Preheat oven to 170'C
  1. Add mixed nuts to Closed lid, 4 seconds, speed 9 (Should be similar texture to almond meal, a few larger pieces is fine also for a bit if extra crunch)

  2. Add dried apricots, 4 seconds, speed 5

  3. Now add everything else in any order

  4. Mix 30 seconds, speed 4. Mixture will be sticky.

  5. Pour into tin prepared with baking paper.  I use a square cake tray approx 23 x 23cm but I have also used a slice tray.

    Press mixture firmly into tin

  6. Cook for 12-15 minutes or until golden brown.  Leave in pan for approx. 10 minutes to semi cool, then transfer to a wire rack to finish cooling. Slice into desired portions when cooled.

    Store in an airtight container.  A great breafast on the run!

Tip

This is so versatile, you can really add anything.  My hubby prefers to have sultanas, raisans and currants instead of apricots and isn't a fan of chia teeth so I omit for his special one.  Have also added white chocolate pieces in the past so you could use choc chips.
