Recipe's preparation
Add rice bubbles and combine on Reverse "Counter-clockwise operation" speed 1 for 1 minute (or until all combined).
Scrape down the sides half way through - at which time you can add extras (refer to 'Additional Tips' below).

Tip
You can use more ingredients (I used less because I ate some of the marshmallows).
OPTIONS:
1. Add choc chips / nuts / dried fruit after adding the rice bubbles.
2. Sprinkle with hundreds and thousands once spread out on the tray.
Great for a holiday snack or to pop in the lunch box!
Another GREAT Option:
Add 60g Jersey caramels in place of 40g of butter!!
(You simply need to add 20-30 seconds onto your 'melting' time.)

Great recipe! I cut and wrap individually in baking paper and leave in fridge as we are in Nthn Aust and so a hot climate. Kids have fridges at school foe lunchboxes so never a problem to eat at school ☺

I have been making this recipe for a few years now and love how quick and easy it is- great for a lunchbox treat and holds together well even on a hot day, but as I always seem to have marshmallows and rice bubbles around it has even served as a last-minute recipe for a work meeting!

This is amazing! nowhere near as sweet as LCM bars and the kids devoured the first batch! i used less marshmallows as i didnt have more and it still set brilliantly. easy to keep in a container in the fridge and doesnt melt when out and about!

Quick, easy, yummy and cheap. Just made this for first time can't beleive how easy it was. Only had 80g marsmallows so made up to 120G with caster sugar. Added cashews because thats allI I had next time could add peanut butter. Will be great for next playgroup bring a plate.

Quick. Simple. Tasty. What more could you ask for? I made these last night for the kids lunchboxes. I used pink & white marshmallows as that is what I had, mixed through some popping candy and sprinkled with a few choc chips. So much cheaper than store bought LCM's. Will be making these regularly. Thanks for an awesome recipe.

The reason I recommend white
The reason I recommend white marshmallows only is because of the chemicals found in pink ones.
You certainly can add lots of wonderful things to 'brighten' this recipe up!

Just made these with my two year old and we coloured the marshmellow blue. Looked awesome and tasted great! Better than an LCM any day!
Second batch is in the fridge
Second batch is in the fridge now! My kids and hubby love them (too sweet for me), I used white and pink marshmallow as that's what I have on hand, the kids don't mind the pink colour in the end result. I also add choc balls (larger coco pops) in the mix and it seems to be a hit. I too have the problem of them going stale when stored in an air tight container. I'm going to leave this lot in the fridge and see they work any better. I used half butter and half coconut butter this time to try something different - needed to melt the mix for a touch longer at the start but the mix tasted just as good as the first batch. Thanks for the recipe, excellent lunchbox filler.
