Buttermilk Vanilla Cupcakes
- 370 gram buttermilk, or soured milk at room temp
- 405 g Self Raising Flour, sifted
- 225 g sugar, very fine
- 190 g Butter
- 3 eggs, separated and at room temp

Recipe's preparation
Pre-heat oven at 200 degrees or 190 degrees fan forced. If using normal sugar you can add vanilla essence with the egg yolks later. Weigh 225g of sugar, grind on 9 for 6 secs for raw sugar, 3 secs for white sugar. Set Aside.
If you don't have buttermilk, you can mix the whey from firm yoghurt with skim milk, or add a tsp of lemon juice to light milk
Presift your flour by placing in the Thermomix and mixing on speed 5-6 for 8 seconds.
Place chopped butter into bowl and soften 20-30secs sp 4. In warmer weather use smaller time.
insert Butterfly. Return sugar to TM bowl and cream butter and sugar for 1 minute sp 4. Scrape sides of bowl and then beat a further 30 secs on speed 4. You can do a further 30 seconds, the mix should be pale and creamy.
Add the egg whites and whip for 1 minute sp 4, again scraping sides and whipping for a further minute.
Add the egg yolks (and the vanilla extract if using) and whip for 20 seconds on speed 4.
"Counter-clockwise operation" Add 1/2 each of the buttermilk and flour with pinch of salt and fold for 5 seconds on reverse, speed 2. Scrape the sides of the bowl. Add the remaining half and fold ingredients for 10-15 seconds, reverse, gradually turning speed up to 3..
Pour into prepared muffin tray, 3/4 filling each patty paper.
Turn down the heat by 20 degrees, bake 170-180 degrees for approximately 20 minutes or until an inserted skewer comes out clean.
Allow to cool for 5 minutes before removing onto cooling racks. Easiest to decorate if frozen first. Some icing suggestions are: thermogirl's chocolate fudge frosting, or the wilton's buttercream modified for thermomix using copha.

Yum! I made butter this morning so wanted a treat to use up the buttermilk. These fit the bill; 24 delicious fluffy cakes. We had to eat some straight from the oven, they were so good.

I struggled with the recipe at first as it doesn't quite explain properly so I just mixed everything together, and they turned out great! Really soft and tasty!

Mine got stuck too. I just took the butterfly out and softened the butter a bit more by mixing it with the blade for longer, then put the butterfly back in and continued on as per direction. Cupcakes were yummy

These are lovely light and fluffy. I cut back on the sugar and had to use a bit of coconut oil as I ran out of butter! All ready for the shearers tomorrow!

These make delicious
These make delicious cupcakes. I was a bit slack and didn't follow the recipe exactly (ie I didn't use the butterfly) and they came out perfectly. Not too sweet either which was nice.
The butterfly got stuck
The butterfly got stuck during processing at Step 5. The butter must have been too cold. I remedied this by selecting 37deg temp for 5 seconds which worked a treat and allowed the butterfly to cream perfectly.

just made these using only 2
just made these using only 2 eggs and some dried strawberry puree that i quickly made beforehand, iced with cream cheese icing - also flavoured with the strawberry puree - amazing!! will do this again (strawberries only 89c a punnet so used 3 to dry in the oven - made about a cup of puree in the end. oh, and didn't seperate the eggs or presift the flour either and worked out perfectly.

Even two months of owning a
Even two months of owning a thermomix teaches you alot. After uploading this recipe, I realised I don't need to sift - just throw it into the thermomix and whizz for a few seconds. Also, fillig the cupcakes to 3/4 and turning down the heat as you put the cupcakes into the oven makes a difference to the outcome.
