Thank you for posting this, was a huge sucess at christmas with my family. I too doubled the caramel because we love a thick layer of it.
Warning if you make this
Warning if you make this slice... It will sit in the fridge and call your name. You will dream about it and you will need to make it over and over again.
I baked on 170c in a square 23cm x 23cm dish and it was the perfect height. I cooked the second layer for 15 minutes. The top should be slightly browned (a caramel colour). Wait for the caramel layer to be cool before adding the chocolate layer. I added 1 tbs grapeseed oil to the chocolate layer so it was easy to slice and did not crack. I didn't freeze before cutting but did allow ample time for the chocolate layer to set and then cut with a hot, sharp knife.
Perfect!

As previous comments "better than bought"! The only thing I would change is to mix the caramel on sp 2 at Varoma temp otherwise it stays runny. I cooked ay 180 deg but next time would try 170 deg as the top got very brown. I iced with chocolate icing.

Yum! I made my own sweetened condensed milk from this site and used rapadura sugar/rice malt syrup in place of the brown sugar/golden syrup. Vert addictive!
