Ingredients
Cake
- 60 g walnuts
- 140 g Raisins (or sultanas or currants)
- 300 g carrots, chopped into 4
- 200 g oil grape seed or canola
- 4 --- free range eggs
- 300 g raw sugar or rapadura sugar
- 140 g flour plain
- 140 g Whole Wheat Flour
- 2 tsp baking powder
- 1 tsp bicarbonate of soda
- 1 1/2 tsp cinnamon
- 1 tsp Nutmeg
- 1 pinch ground cloves
Icing
- 500 g icing sugar
- 1 Orange rind
- 250 g cream cheese
Recipe's preparation
Preheat Oven to 160c. Line 2 loaf tins or one large square tin.
Chop nuts if required smaller by placing in TM bowl and chop for 1 second on speed 4. set aside
Place carrots into bowl and grate for 4 seconds on speed 7. set aside
Put oil, eggs, sugar into TM bowl. Mix 5 seconds on speed 7.
Add flours, baking powder, bicarbonate of soda and spices. Mix for 5 seconds on speed 5.
Add nuts, carrots, raisins and mix for 5-10 seconds on "Counter-clockwise operation" and speed 2 to blend. Check to see all are incorporated. If not use spatula to incorporate.
Turn into prepared tins and bake for 45mins to 1 hour until skewer comes out clean.
To make icing place orange rind with icing sugar into TM bowl and mix speed 9 for 20 seconds.
Add cream cheese and mix speed 9 for 15-20 seconds until smooth, one can add some milk if icing needs to be thinner.

I made this cake today, I didn't get a lot of rising and as such I have two very flat loaf cakes. I ended up with twice as much icing as I needed so have frozen some for my next cake.
This carrot cake is awesome.
This carrot cake is awesome. I halved the recipe and put it into a loaf tin, perfect for our family of three. I also use lime zest instead of lemon, still lovely flavour. I also halved the icing sugar quantity but kept the 250 gms of cream cheese which eliminated the graininess of the icing.

It was very nice. I forgot to take the carrots out of the bowl after chopping them so they kind of liquified. I didnt have the oil in the recipe so I used olive oil.
I made it in one big cake. Friends were very impressed.
I made the frosting and it was very grainy so I thought I did something wrong and rushed back down the shop for more creamed cheese and the second lot was also grainy and the more you mix creamed cheese the runnier it gets so I added butter like a comment above suggested. perhaps I will try less next time.

Fantastic tasting cake! My husband said the icing I made tasted a little granulated but I couldn't stop licking it off the spatula when I made it! The cake tastes great too. The only differences from your recipe was I added 20g more nuts and cooked the cake for 30mins longer. I also added some butter to my icing because it was too thin to begin with and I didn't want to add more suger. I will most definitely be making this cake again and the great thing is, there was so much cake mix, I made two! Thanks for your recipe. Am still a beginner at TM but enjoyed the whole thing. I even had to make my own icing suger because I had none in the cupboard. No problem with this machine!

I have just made this recipe
I have just made this recipe and some of the mix went into a muffin tin as well as a loaf tin. End result was great.
I am curious though as to how it only took 5 - 10 seconds on the reverse function on speed 2 to mix the nuts and carrot into the mix. I found it was closer to 5 minutes and wondered if perhaps there is something wrong with my machine.....its only a new machine so hopefully there isnt anything wrong with it.
