Carrot Fruit Cake with Cream Cheese Frosting

Ingredients

Carrot Fruit Cake

  • 100 grams olive oil
  • 300 grams carrots, tailed and chopped into pieces
  • 3 eggs, room temperature
  • 1 level tsp vanilla essence
  • 100 grams brown sugar
  • 220 grams plain flour
  • 1 level tsp baking powder
  • 2 level teaspoons ground cinnamon
  • 2 level teaspoons ground ginger
  • 1 level tsp ground nutmeg
  • 2 level teaspoons bicarbonate of soda
  • 1 pinch salt
  • 250 grams Mixed fruit
  • 100 grams walnuts, cut into halves
  • 280 grams pineapple pieces, chopped

Cream Cheese Icing

  • 250 grams cream cheese, room temperature cut into pieces
  • 180 grams Butter, cut into pieces
  • 230 grams icing sugar
  • 1 level tsp vanilla essence

Recipe's preparation

    Method for cake
  1. 1. Pre heat oven to 160 C. line or grease a cake tin approx 26 cm.
    2. Add carrots to bowl and grate 5 seconds / speed 6
    3. Add oil, eggs, vanilla, brown sugar, flour, baking powder,
    baking soda, cinnamon, ginger, nutmeg, salt.
    4. Mix 5 seconds / speed 5 .
    5. Scrape down sides of bowl with spatula.
    6. Add mixed fruit, walnut halfs, pinapple.
    7. mix 10 seconds on REVERSED speed 5 second.
    8. Pour mix into perpared tin and bake for approx 55 mintues or until a skewer instered comes out clean.
    9. Clean and dry bowl.
    10. Allow to cool for 30 minutes in tin then turn out onto wire rack to cool completely
  2. Cream Cheese Frosting
  3. Add cream cheese, butter, icing sugar, vinilla to bowl
  4. mix for 20 seconds / speed 5
  5. spead over completely cooled cake
