Cake batter

  • 250 g Carrot's, Chopped into 3cm coins
  • 150 g plain flour
  • 1 tsp bicarbonate of soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 150 g caster sugar
  • 100 g pecan halves
  • 150 g oil, (Any, but preferably Veg)
  • 2 eggs
  • 1 tsp vanilla essence

Frosting

  • 50 g Butter, Room Temp
  • 75 g cream cheese, Full Fat
  • 1/2 tsp vanilla essence
  • 100 g icing sugar
  • 1 tbsp pecan halves

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Cake
  1. Preheat oven to 180 Degrees and line a 23cm lined spring form tin.

    Place carrots in the bowl and chop Sp 5/ 5 Secs

    Place all the rest of the ingredients on-top of carrots and mix Sp 5/ 10-15 Secs or until thoroughly mixed.

    Pour batter into the cake tin and bake for around 45-50 mins. Check its cooked by poking a skewer into the middle, if it is cooked it will come out clean

    Frosting

    Put all ingredients EXCEPT PECAN HALVES into bowl and mix Sp8/20-30 secs or until nice and creamy and so its not grainy.

    Spread onto completely cooled carrot cake and decorate with pecan halveson the frosting

Tip

You can bake this cake in individual muffin cases. Pour batter into muffin cases and just bake for around 20-30 mins. It makes around 12 Muffins.This cake can be frozen once cooked and cooled unfrosted. Just take out of the freezer when needed, let it defrost then make up the frostring from fresh and decorate.
