Chewy Tahini Cookies

  • 230 grams raw almonds
  • 75 grams tahini, hulled
  • 100 grams maple syrup or honey
  • 1 tsp vanilla extract or essence
  • 25 grams Sesame Seeds, White
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Recipe's preparation

  1. Preheat oven to 180deg fan forced and line a large baking tray
  2. Place large plate or small lined tray on top of Thermomix bowl and using scales to weigh sesame seeds onto it. Set aside
  3. Place almonds into bowl and mill 10 secs Speed 8, set aside
  4. Add tahini, syrup & vanilla into bowl and mix 10 secs Speed 3 (extend mixing until blended nicely)
  5. Add almond meal, baking powder and salt and combine 30 secs Speed 4. Scrape round blade and reblend for a few more secs.
  6. mixture is stiff, a hard spatula is handy here. If you are struggling to get the mixture out of the bowl, place upside down on plate and gently disengage the blades.
  7. Roll approx a teaspoon of the mixture into a ball and press into sesame seeds to coat one side. Place seed side up and cook for approx 12 mins till edges are slightly browned.
  8. cookies will still be soft when they come out of the oven, leave to cool on the tray and they will crisp up but still be chewy on the inside. ENJOY

If you don't want to make your own almond meal, just skip Step3 and weigh in 230g meal at Step 5
