This is my go-to banana recipe when there are a few brown ones in the fruit bowl! Kids love them. I usually get 15 muffins.
Today I ran out of choc chips so I added a packet of fudge pieces. Highly recommend, especially warm!

This turned out delicious. As some others have done I put the choc bits with the dry ingredients, only mixed for 20 sec & omitted step 4. I also only had one very ripe banana & added about 40g of coconut. I cooked at 180 fan forced. Thanks for sharing.

Thanks for the recipe
We are usually refined sugar free but had Easter eggs to use up so used them in place of the chocolate chips. I used spelt flour and 1/2 the amount of rapadura sugar to make it a bit healthier. A hit with the kids and hubby.

Hi Mim...not sure if you are still making these muffins seeing as it's two years since you posted this comment. Less processing time should make the muffins light. I'm pleased you enjoyed the flavour....hope you were able to make them lighter.
cheers

Made these this afternoon in
Made these this afternoon in 2 minutes I didn't want to put in any chovolate do just left it out. And instead of 100g caster sugar I did 60g sugar and 40 grams shreded coconut. They are hands down the best muffins ever! Thanks so much. Also i don't think they need to be mixed for the full 30 seconds at the end. I just did 20 and saw it was combined enough.
They were so easy to make

These muffins came out of the TM looking soft and silky (I went with the suggestion of adding choc chips to the dry ingredients). They are smelling delicious cooking in the oven now and I'm sure they will be devoured when my daughter gets home from school with some friends!! Thanks for the recipe - great for us newbies!!

Hi Mim
Muffins are best if they are mixed for a minimal amount of time so it's worth a try to put the choc bits in at the same time as the other ingredients.
I'm pleased your famity enjoyed them.

I made these this afternoon
I made these this afternoon and my 3 year scoffed a whole one to himself (he doesn't usually do that!). They were so yummy! My only reason for not giving the 5th star is they seemed to turn out quite dense. I don't know if it's me (because some cheese muffins I made out of the lunchbox cookbook turned out REALLY rubbery) or not. I followed this recipe to the letter though. Can anyone give me any suggestions as to what I may be doing wrong? I thought maybe I was overprocessing them so next time I make these (and there will be a next time, they're so delicious!) I was going to add the choc bits at the same time as the other dry ingredients and pop it on reverse, so I don't have to do the additional mixing afterwards. Thoughts?
