Ingredients

Cake

  • 200 grams rice
  • 30 grams Cacao (Raw)
  • 160 grams Coconut sugar
  • 160 grams water
  • 50 grams coconut oil
  • 2 teaspoon baking powder
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla extract

Icing

  • 160 grams coconut cream
  • 70 grams Coconut sugar
  • 30 grams Cacao

Recipe's preparation

    Cake GF,VEGAN
  1. Preheat oven to 180


    Add rice to Thermomix bowl, blend speed 9 for 1 minute until a flour.


    Add remaining ingredients and blend speed 4 for 10 seconds. Scrape down bowl.


    Open lid and add butterfly and mix 10 seconds speed 4.


    Allow to stand for around 20-30 mins. I did this to let the chia swell a bit before baking.


    Pour into a lined cake tin and pop in the pre-heated oven for 30-35 mins.


    I made mine in a square flat tin. If using a round tin or doubling portions you may need to allow a longer cooking time.


     

  2. Icing, GF,VEGAN


    Add all ingredients into Thermomix bowl and mix 20 seconds speed 4.


    Spread icing over cooled cake and place in fridge.


    Serve when icing has set Smile

    this was super delicious, I made it for my birthday and served it with banana coconut vegan icecream and it was a winner all round. The icing is so rich made with such simple ingredients, it did go dry in the fridge so maybe even better eaten on the day - thank you!

    Pretty good, nice flavour. The chia seeds all floated on the top of the cake so I'm not sure what I did wrong, it was still yummy though.
