Chocolate Chip Cookies - Soft and Chewy (Mrs Fields style)

Ingredients

24 piece(s)

Dough

  • 250 g unsalted butter
  • 110 g caster sugar, or similar
  • 300 g brown sugar
  • 2 eggs
  • 2.5 teaspoon vanilla extract
  • 400 g plain flour
  • 3/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon bicarb soda (baking soda)
  • 480 g choc chips, milk, dark, white - whatever you prefer

Recipe's preparation

  1. ** Preheat your oven to 180 degrees

     

    Cream butter, sugars (caster and brown), eggs and Vanilla together for 20 seconds, speed 4.5.  Scrape down and repeat 30 seconds, speed 4.5

     

  2. Add flour, salt, baking powder and bicarb soda and mix 20 seconds, speed 5

  3. Add chocolate chips and mix, 20 seconds, reverse Counter-clockwise operation, speed 5 - using spatula through MC hole if needed.

  4. Place golf ball sized and shaped amounts onto a baking tray with a good amount of space either side and bake in a moderate oven (180 degrees) for 10 minutes.  The key is to remove them when they are still a little under-done as they'll continue to cook for a few minutes outside of the oven. 

    I use a mini-icecream scoop (heaped) to help speed up the ball process.

Tip

You could have this recipe (and then would be suitable for TM31)You could have less choc chips, and add some nuts in.  Great gift idea, or for anyone that loves American styled cookies with a soft and chewy centre. Very like Mrs Fields

    My granddaughter and I just baked these and it made so many biscuits, not sure why the recipe says 24 we got 60 biscuits. They are delicious and that is their school snacks done for a few weeks I would guess (if they last that long. Mixture was a little dry and I finished mixing the chips in by hand but they cooked up beautifully.

    Such a good recipe!!! I halved the batch and it still made plenty. Also reduced the sugar and choc chips slightly and they were still delicious. Definitely recommend trying this one!!

    Thank you, now saving myself $ instead of having to pay Mrs F's prices for her cookies. I halved it as I have TM31 and I'm the only cookie eater in the household. Lucky me! For other TM31 users I also halved mix times except after adding flours (I did 2 x 10 sec and scraped down in between) and they came out perfect.

    Made the recipe as directed (excepted only half the choc bits) and they were chewy and delicious. Really are just as good as Mrs Fields! Going to try a half batch of mini cookies now. Thanks for a great recipe. Kids went crazy for them.

    Thanks for trying them Kathyz.  I was perplexed as mine didn't turn out dry at all and mixed well.  I just checked over my recipe and realised that I forgot to include eggs!! So, I've amended it now to include 2 eggs.  So sorry - but thanks for your feedback as it helped me correct the recipe.  Sarah.

    Just made this and they are great but too sweet, I would cut the sugar down by half I think. The mixture was very dry too and didn't mix very well in thermie, had to hand mix in the chips as they were being shredded cause the mixture was along the sides. With a few tweeks this will be a really yummy biscuit.
