Recipe's preparation
- Preheat oven to 180 deg C.
Place butter and sugar inand beat together, 1 min/sp 4.
Add egg and jam, beat 15 sec/sp 4, scrape down sides of, beat a further 15 sec/sp 4.
Add coconut, flour and cacao powder, mix together with the aid of the spatula, 40 sec/sp 4.
Using a teaspoonful, form into balls, place onto lined oven tray, flatten with a fork. Bake in moderate oven approx. 12 minutes or until lightly browned. Place on an oven rack to cool.

Tip
I use a silicone baking mat on my oven slides and they come out perfect.
These are very "naughty" biscuits as you can't stop at just one. Be prepared to make these often.
