Chocolate fudge

Ingredients

Fudge

  • 500 g cooking chocolate (dark or milk), broken into pieces
  • 400 g condensed milk
  • 65 g Butter
  • flavouring, eg peppermint essence, 100g chopped nuts, 100g lollies

Recipe's preparation

  1. 1. Line a square cake tin with foil.

    2. Place chocolate in bowl, grate for 10 seconds sp 9. Scrape down sides.

    3. Add condensed milk and butter. Mix on sp 3-4 for 2 minutes 90C or until butter has melted. Scrape down sides.

    4. Add flavouring, mix sp 6 for 10 secs (Counter-clockwise operation if using nuts/lollies) until mixture is smooth and glossy.

    5. Pour into prepared tin. Refrigerate until set. Cut into small squares to serve.

    Keeps refrigerated in an airtight container for at one week.

    I just made this and its amazing. It's setting in the fridge but I licked the bowl clean haha. I added 100g of smashed mints and it gave it a subtle mintyness.

    I used Thermie made condensed aswell, still hot and fresh made, http://www.recipecommunity.com.au/basics-recipes/easiest-sweetened-condensed-milk/184312 

    Not sure why there is comments in regards to using a microwave as Thermie does all the work.

    Made a batch of condensed milk today and had some left over, so thought I would give this fudge a go.  So easy and very yummy.  Halved the recipe.  I chopped up some macadamia nuts and added at the end.  Used half milk chocolate and half dark chocolate.  Didnt find it too rich.  Will definitely make again.  Thank you for sharing.

    I don't use a microwave for this recipe. I've done it on a stove top on a saucepan over low heat, and that works fine. Just stir till everything is smooth. I'm guessing a medium setting in a microwave to avoid burning the chocolate.
