Chocolate Hazelnut Cupcakes

Hazelnut Ganache

  • 400 g Cadbury Hazelnut chocolate block, broken into pieces
  • 200 g pure cream

Cupcakes

  • 225 g Full Cream Sour Cream
  • 100 g sunflower oil
  • 2 Extra large eggs
  • 1 tsp Vanilla Bean Paste
  • 1 tbsp Instant coffee powder
  • 220 g plain flour
  • 400 g sugar
  • 90 g cocoa, (see notes)
  • 1 tsp baking powder
  • 1 tsp baking soda/bicarb
  • 1 tsp salt
  • 250 g hot water, straight from the kettle

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat the oven to 160℃.

  2. Line 2 cupcake trays with 24 cupcake liners.

  3. Hazelnut Ganache
  4. Add chocolate to the bowl. Chop 10 sec/speed 8. Scrape down the sides of the bowl.

  5. Add cream. Heat 2 min/50℃/speed 3.

  6. Transfer as much as you can into a glass bowl and place in the fridge for 2 hours. Do not wash the bowl.

  7. Cupcakes
  8. Add sour cream, oil, eggs, vanilla and coffee powder to the bowl. Mix 10 sec/speed 4.

  9. Sift in flour, sugar, cocoa, baking powder, baking soda and salt. Mix 10 sec/speed 4.

  10. Add hot water. Mix 10 sec/speed 4.

  11. Scrape down the sides and the bottom of the bowl. Mix 5 sec/speed 4. The mixture will be very runny.

  12. Divide mixture between cupcake liners and bake around 22 mins until a wooden skewer comes out clean. Let cool completely on a wire rack.

  13. Decorate with ganache and add a Fererro Rocher chocolate if you like.

Tip

Cocoa - I love Woolworths's Homebrand Cocoa

I use a 50ml measuring cup to make sure all my cupcakes are the same size.

Decorating - Place the ganache in a piping bag with a large round nozzle and pipe a big blob. Place the Ferrero Rocher on top and push down a little.
