Chocolate Mud Cake

  • 250 g dark chocolate
  • 250 g Butter
  • 1 teaspoon granulated coffee
  • 550 g caster sugar
  • 185 g water
  • 30 g cocoa powder
  • 325 g plain flour
  • 1 teaspoon vanilla extract
  • 40mls --- vegetable oil

Recipe's preparation

  1. add chocolate, butter, coffee, water and sugar to bowl
  2. melt for 5min, sp3
  3. add the eggs, buttermilk, vanilla and vegetable oil
  4. mix for 30sec, sp3
  5. add the flour, cocoa powder, and bicarb soda
  6. mix for 30sec, sp3
  7. pour into prepared tin and bake at 160C FF for 1hr 30min
  8. check with a skewer, the batter should be cooked and clumping on the skewer not wet or dry and clean

Tip

baking times may vary, depending on your oven. baking strips are great for helping the cake to cook slowly and evenly without over cooking the edges first.
