Chocolate Zucchini Banana Muffins

Ingredients

Chocolate Zucchini Banana Muffins

  • 2 Bananas Mashed
  • 65 g oil
  • 1 egg
  • 200 g raw sugar
  • 1 1/2 Cups Grated Zucchini (drained well)
  • 250 g plain flour
  • 25 g cocoa
  • 1 teaspoons baking soda
  • 1/4 teaspoons baking powder
  • 160 g chocolate chips

Recipe's preparation

  1. Oil Muffin trays and pre-heat oven to 180C.

    Add banana, oil, egg, sugar & zucchini to TM bowl

    Mix speed 5, 5 seconds

    Add flour, cocoa, baking soda & baking powder

    Mix speed 4, 10 seconds

    Scrape down sides

    Mix speed 4, 10 seconds

    Add Chocolate chips

    Mix speed 3, 15 seconds, reverse.

    Bake for 20 minutes or until skewer comes out clean.

    I roughly chopped 2 zucchinis, then grated for 3 seconds speed 6 (I did them
    one at a time though, as I wasn't sure how much it would make) drained off water with nut bag, then mashed the 2 bananas 3 seconds at speed 4 before proceeding with recipe. I also halved the sugar and choc bits and they were sweet enough.

    mbadham13: well, they're not exactly healthy, with 200g sugar and 160g choc chips, plus all the fruit sugar from the banana. But the hidden zucchini is a bonus.

    This has become a regular in our home, my daughter (4) loves them and im stoked she gets her dose of veg/fruit all in one sweet treat. I enjoy the taste too tmrc_emoticons.) I always use wholemeal flour, raw sugar and coconut oil but last time i forgot the oil and they still turned out fine! I freeze them and add one into her lunch box and they seem to thaw pretty quickly.

    7year old grand daughter won’t eat fruit or veg but she loved these, I’ll tell her later about the zucchini and banana. Everyone else in the family enjoyed them too. Will be great to freeze and put in lunch boxes.

    OMG these don't look decadent but they certainly taste it! I could not stop eating them and my 3 year old loved them too. Heat it up a little the next day and eat it with vanilla ice cream, it is devine with the chic chips melted inside.

    Great recipe, i was able to swap the plain flour for GF flour to adapt this recipe for my dietary requirements. You would have no idea its got zucchini in it which is great. My husband was funny about about me making 'banana/zucchini muffins' as he thought they would taste like zucchini haha. I also made this into a cake rather than muffins and is cooked great in a shallow dish in the oven tmrc_emoticons.) Thankyou!

    These muffins are really tasty!  you can't even tell that there's zucchini in there so I didn't tell my family just in case.  I like that there's not an overly strong banana taste.  Just perfect.  I'll make these again tmrc_emoticons.D   Instead of vegetable oil I used coconut oil

    This has to be one of my favourite muffin recipes ever. The whole family loved it and I feel better knowing there is a little fruit and veg in our snacks. You'd never know the zucchini was in there and the banana flavour is really mild. Thanks for the great recipe  Love

    I tried this one today to take to daycare to share for my son's birthday. We had 3 test one's when we were done... we wanted more!! I used coconut oil and stevia (4tsp) in place of the sugar. So moist and delicious. Hubby does not like zucchini...scoffed it tmrc_emoticons.;-) 3yo approved with a chocolate smile
