Chocolate Zucchini Muffins

  • 1 medium zucchini, chopped
  • 225 grams white sugar
  • 125 grams vegetable oil
  • 2 teaspoons vanilla extract
  • 300 grams self-raising flour
  • 35 grams cocoa, sifted
  • 2 eggs
  • 1 teaspoon salt
  • 2 tablespoons icing sugar

Recipe's preparation

  1. 1. Preheat oven to 160⁰c
    2. Place chopped zucchini into jug and grate 4 seconds speed 5.
    3. Transfer zucchini to another bowl and set aside.
    4. Without cleaning the bowl add sugar, oil, extract, flour, cocoa, eggs and salt. Blend 15 seconds speed 4. The batter will be quite dry at this stage.
    5. Return zucchini to the bowl and blend 20 seconds speed 4. Remove lid and scrape down the sides of the bowl and blend again 20 seconds speed 4.
    6. Divide mixture between 24 lined mufffin tins and bake for 15-18 minutes.
    7. Allow to cool slightly before dusting with icing sugar.
