Clone of Apple, Pear and Cinnamon muffins (vegan, egg-free, dairy-free)

Ingredients

Muffins

  • 2 Fuji Apples cored
  • 25 g Raw almonds (skin on)
  • 25 g walnuts
  • 20 g sunflower seeds
  • 130 g Unsweetened almond milk
  • 60 g Pure Maple Syrup, (Or preferred liquid sweetner)
  • 180 g Self Raising Flour
  • 2 heaped teaspoons ground cinnamon
  • 30 g olive oil spread
  • 30 g coconut oil

topping

  • 1 tablespoon brown sugar
  • 1 heaped teaspoon cinnamon

Recipe's preparation

    Muffins:
  1. - Turn oven to 180'C

     

    - Mill nuts and seeds for 45sec Speed 9. Set aside.

     

    - Add Fuji Apples and chop 5 sec Speed 9, then scrape down sides.

     

    - Add milled seeds and nuts and all other ingreadients and mix 10 sec Speed 5 (do not overmix or muffins will not be light and fluffy)

     

    - Spray muffin trays with olive oil and divide evenly into 12-capacity muffin tray.

     

    - Mix brown sugar and cinnamon and sprinkle a little on top of each muffin

     

    - Bake for 20mins, or until muffins spring back when gently pushed

     

    - Cool in tray for 5mins and then turn out on cooling rack

    I've just made these & they smell delicious but they don't seem cooked. They are still very soggy & they have been in for 15mins longer than said already & they haven't risen.

    Also the title says Apple & pear- there was NO pear in the recipe?????

  • If you make the muffins

    If you make the muffins smaller (at least 12) then they'll cook through better and add a little baking powder if they are not rising enough for your liking. Size of the apples would also make a difference tmrc_emoticons.)

    These were very yummy. Only made 7 though and didn't rise for me. I'm glad it filled them to the top. They were extremely moist but to the point that they didn't seem cooked through enough but I knew they were. Added another 5 min to it and still soggy in the middle. Maybe it was a little too much Apple (They were 2 very large Fuji apples). Or did I read it wrong when I added 30grams of olive spread (nuttlex) and 30g of coconut oil? They were delicious though and I will definitely make them again. Thanks for sharinc
