Coconut and Date Cookies - No added sugar Healthy Kids Snack

Ingredients

Coconut and Date Cookies

  • 360 grams pitted dates
  • 65 grams coconut descicated
  • 40 gram rolled oats
  • 100 gram Wholemeal Self Raising Flour
  • 1 tsp baking powder
  • 1 tsp vanilla essence, to taste
  • 2 tablespoon coconut oil
  • 1 Ripe banana, (medium in size)
  • .05 litres Milk, (50ml to wet the dough)

Recipe's preparation

    Easy steps to follow
  1. Preheat oven to 180C

    Line large baking tray with baking paper

    Place all ingredients into Thermomix bowl.  Chop 10 Seconds / Speed 8.

    Add milk to moisten the dough.  Mix 4 seconds / Speed 6

    Remove bowl and with aid of spatula, scoop out small balls of the dough.  Roughly round each one and slightly flatten.  Place onto baking tray.

    Pop baking tray into preheated oven and bake for 12-15 mins, until slightly browned on top.

    Each cookie ball is approx the diameter of a 50 cent piece, but feel free to make bigger or smaller, as required.

    The dough is quite moist, but thats ok.  The cookies come out nice and moist and chewy!

    These cookies freeze very well in an airtight bag, and popped into lunchboxes frozen.  Otherwise, store in an airtight container and they are still good after 5 days, if they last that long!

Tip

To make a non dairy version, use almond milk or similar to wet the dough at the final step.

    These are perfect to cook with the kids - no sugar and no eggs so they’re pretty healthy and they eat the dough while we are rolling them and it doesn’t matter. I make with 1/2dates and 1/2 sultanas. Often I add choc chips to the top to make it a little bit fun. Thanks for sharing this recipe!

    I have only had my TM5 for 3 days before I tried this recipe and I am so impressed with how it's not only fool proof but also tastes delicious. Along with fellow comments I cut my dates down to around 200grms.
    The kids love them and a great snack for the 3pm sugar craving.

    I also reduced the dates to 260g and used plain flour (with 2tsp baking powder) as I had no wholemeal and they are delicious. Beautiful texture. Kids and hubbie enojoyed them too.

    Delicious! I added 50g macadamia nuts and chia seeds. I also used 100g of oats, so added 100g milk to moisten and reduced dates to 300g and they were just fabulous. Thanks for such an easy, tasty and versatile recipe.

    These are super yummy and my kids loved them. I did cut the dates down to about 200g and I used a medium/large ripe banana and I still think you could possibly reduce the dates even further as they were quite sweet. Will definitely be making these again!

    I didn't have enough dates so I used a combo of what I had in my cupboard (figs, sultanas, currants). I also added some chia and was a bit heavy handed with the coconut oil so I didn't use any milk. The kids and I are just eating them now, warm from the oven. Yum! Nice healthy treat for morning tea or school lunch box.
