Coffee and Walnut Fudge

  • 395 grams condensed milk
  • 180 grams milk chocolate
  • 120 grams Butter
  • 160 grams white sugar
  • 50 grams glucose syrup
  • 1/4 cup walnuts, cut into small pieces

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. MILL Milk chocolate melts at speed 9 for 10 seconds MC ON. Set aside.
  2. ADD condensed milk, butter, sugar, coffee and glucose syrup to bowl. Cook at 100 degrees speed 3 for 8 minutes. MC OFF
  3. Scrape down sides. Cook for a further 20 minutes on Varoma temperature speed 3. MC OFF
  4. ADD milled chocolate and walnut pieces. MIX on reverse speed Counter-clockwise operation 3 for 10 seconds until chocolate and walnut pieces are combined.
  5. POUR into lined square cake tin 20cmx20cm (approx). Sprinkle with walnut pieces if desired.
  6. LET COOL for an hour or two on the bench.
  7. REMOVE from tin and slice into squares and place in container.
  8. STORE in the fridge.
