      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180c. Line cookie sheets with baking paper and set aside.

    Insert butterfly into scrupulously clean bowl. Add egg whites and beat 3 minutes at speed 4. Over the next 5 minutes, rain in the caster sugar. Do NOT rush this step or you risk collapsing the egg whites. Add vanilla essence speed 4 and then egg yolks, 1 at a time. Stop machine and gently scrape down sides. 

  2. Add dry ingredients and mix 10-15 seconds on speed 1. Remove butterfly and gently fold in any dry ingredients that didn't mix in. 

    Place heaped teaspoonsful onto lined trays and bake for 10 minutes. Allow to cool for 2 minutes before removing from trays and cooling completely on racks. 

    The unfilled discs can be stored in an airtight container for weeks. 

    To serve, pipe sweetened whipped cream onto 1 disc, add a blob of raspberry jam if desired, and place in fridge 6-8 hours. Dust with icing sugar and enjoy.

    Just making these now. When you add the caster sugar to the egg white do you have the machine running at speed 4 for the 5 minutes or is it slowly added at another speed? My mixture was quite runny
