Crisp Quinoa Cookies

Ingredients

  • 65 g raw sugar
  • 100 g Butter
  • 1/2 tsp vanilla essence
  • 80 g Peanut Butter
  • 140 g honey
  • 180 g rice flour
  • 75 g Quinoa flakes
  • 1/2 tsp bicarbonate of soda
  • 1/4 tsp salt
  • 35 g pepitas
  • 35 g sunflower seeds

Recipe's preparation

  1. Mix butter, peanut butter, sugar, honey and vanilla on speed 5 30 seconds

  2. Add in all remaining ingredients and mix 10 seconds speed 5, reverse

  3. Roll into 1tblspn balls and place on greased & lined baking tray

  4. Bake 12-15 minutes at 180 degrees C until crisp & golden.  Cool 5 minutes on trays before transferring to a wire rack to cool completely
