Dark Chocolate Zucchini Brownies

Ingredients

Brownie Mixture

  • 500 g zucchini
  • 55 g Grapeseed Oil
  • 150 g natural yoghurt, Jalna
  • 200 g Light or dark Muscavado Sugar
  • 15 g Vanilla Ess/Extract
  • 300 g wholemeal flour
  • 50 g Premium Cocoa
  • 1.5 level teaspoons baking powder
  • 1 level teaspoon salt

Icing

  • 170 g Dark Cooking chocolate chips
  • 60 g Milk
  • 25 g Butter
  • 100 g icing sugar

Recipe's preparation

    Heat the oven to 180 degrees, line 20X30 cm tin with baking paper.

    Brownies

    Roughly chop zucchini and add to thermomiz.

    Add grapesee oil, yoghurt, muscavado sugar and vanilla essence.

    Puree on speed 7 for 20 seconds

     

    Add wholemeal flour, cocoa, baking powder and salt.

    Mix on speed 4 for 20 seconds

     

    Bake for 20-25 minutes

     

    Icing

    This recipe would work fine with no icing or just a sprinkle of icing sugar to cut calories. If you're after something really decadent then read on..

    Place chocolate, milk and butter into thermomix.

    80degrees, 1 minute, speed 2

    Scrape dowen the sides and add icing sugar.

    Mix speed 4 10 seconds, scrape down the sides and mox speed 2 for 20 seconds again.

     

    Ice brownies when cool. You could also add chopped walnuts on top as pictured.

Tip

This recipe can be made gluten free, dairy free, nutfree by making simple substitutes.

It has reduced sugar and oil for fewer calories yet is very moist.

Substitute for coconut oil if you wish.

Wholegrain flour adds fibre.

    tmrc_emoticons.~ mine turned out really terrible - heavy as lead and stodgy.and not a lot of flavour. my kids wouldnt even eat them! is there meant to be eggs in the recipe - as i did follow it exactly?

    I have undercooked mine too. Make sure you're using the right size tin. More cooking time may be necessary with different ovens but shouldn't be gooey in the centre. Glad you enjoyed it tmrc_emoticons.)

    This was very easy to make and yum. Just one question is the cent meant to be googy of semi set? Not sure if I undercooked it.
