1 1/2 level tsp cinnamon
1/2 level tsp mixed spice
120 grams unsalted butter
3 level tbsp flour
75 grams water
1 egg, And water for eggwash
185 g raw sugar

  If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
  For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
  
  Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

Prepare apples by peeling, core and thinly slice into a bowl. Sprinkle the cinnamon and mixed spice in gently and put aside.

add butter to bowl and melt 3m, 60 #2
add whisker to bowl and start on speed 2. Whisk in the flour, then change temp back to 60 for 1 m, #2
with whisk still on speed 2, no temp, add in water and sugar. Cook 3m, 80 #2
reduce heat to 37 and simmer a further 3 m #2

prepare pastry over pie tin.

Pour mix over apples and stir gently. Then add to pie tine and spread out. Using the other pastry sheet, cut out strips and arrange in a woven lattice pattern over the top. Beat the egg and a splash of water and brush over the top.

bake in oven for 50 min at 180 degrees till filling is bubbling. Rest before serving with vanilla ice cream. Enjoy.
