Delicious German style cheesecake

Ingredients

1 portion(s)

base

  • 250 g plain flour
  • 25 g sugar, or less
  • 1 egg yolk
  • 125 g Butter
  • 20 g filtered water
  • 1 pinch salt

cake mix

  • 750 g ricotta cheese
  • 75 g sunflower oil
  • 250 g sugar
  • 1 vanilla bean
  • 3 egg whites
  • 3 egg yolks
  • 40 g cornflour or potato flour

Recipe's preparation

    base
  1. 1. Place all ingredients into Thermomix bowl and combine 10 seconds/speed 5 or until mixture looks like coarse sand.

  2. 2. Pour mixture onto Thermomat and combine into a dense dough ball.

  3. 3. Wrap dough ball in clingwrap and let rest for 1 hour in the fridge.


     

  4. 4. After 1 hour  grate the hardened ball with a cheese grater into a cake baking tray lined with baking paper and sides oiled with oil or butter. Press softly to form the base.


    Of course you can also just roll the dough out with a rolling pin. The method with the grater is much easier and quicker though!

  6. 6. Whip egg whites  with butterfly inserted for 3 minutes/speed 3.5. Set aside.


    Make sure that you use a very well cleaned bowl in this step or your egg whites might not get stiff!

  7. 7. Scrape out the vanilla bean and combine ricotta, oil, sugar, vanilla bean extract, corn flour and eggyolks for 1 minute/speed 4 with butterfly inserted.

  8. 8. Remove butterfly and fold reserved whipped egg whites into mixture. 


    Pour entire mixture onto cake base, spread evenly and bake in pre-heated oven at 180 degrees Celsius for about 50 minutes.

Tip

You can use less sugar for the cake mixture as I personally find it very sweet. But many like it very sweet.

Furthermore you can add fruit like cherries, pears, peaches, apricots (fresh or from a glas). Just pour only half of the mixture onto cake base in step 8, place fruit evenly on top, cover with the rest of the mix and slide into the oven.

    Yum! I added some orange zest to the filling and put in a layer if berries. Looked very impressive. Will make again for sure.

    ABSOLUTELY DELICIOUS.

    I must of only used 3/4 of the base mix and froze the remaining portion for next time.  I added some  slivered almonds and walnut pieces and baked the base until light brown.

    The cake mix I reduced the sugar to 150 grams and added the rind of one lemon.

    DEVINE this is defintely a family favourite.
