Double choc, yogurt and Spelt Flour Muffins

Ingredients

Batter

  • 100g Rapadura Sugar
  • 100g Butter
  • 2 eggs
  • 100g Greek yogurt
  • 1 teaspoon vanilla extract
  • 260g Unbleached Spelt Flour, or sub some wholewheat spelt
  • 1 teaspoon baking powder
  • 2 heaped tablespoons cocoa powder
  • 2 tablespoons Milk
  • 1/2 scoop choc bits

Recipe's preparation

    Muffin Dough
  1. - Prepare muffin tray and place oven onto 180C

    - Add Rapadura sugar to the Thermomix, mill together for 10 seconds on speed 9

    - add butter, greek yogurt and vanilla and mix through the butter mixture for 10 seconds on speed 4. Add eggs one at a time while Thermomix is turning on Speed 3.

    - check wet mixture and scrape sides of inside of the bowl as needed.

    - add spelt flour, cocoa and baking powder to the thermomix and combine ingredients for 30 seconds on speed 5, once done scrape sides of bowl and add milk if needed to make moist batter. mix ingredients for a further 10 seocnds on 5 speed. 

    - Add choc bits and mix reverse/15secs/speed 4

    - place batter into prepared muffins tray and bake in oven 180C for 10-15 minutes or when golden brown.

    - Once cooked turn onto wire rack and allow to cool

Tip

For wholefoods variation, try mixing flour and yogurt and soaking overnight (or 7+hours) then mixing all ingredients together bar choc chips in thermomix 30sec speed 5, scraping down and mixing some more. Add choc chips and proceed as above.
