Dream Bars (using Fruity Pear Mince from Festive Flavour)

Base

  • 90 g Butter
  • 150 g plain flour
  • 60 g brown sugar, loosely packed

Topping

  • 2 eggs
  • 75 g brown sugar
  • 1 tsp vanilla essence
  • 20 g plain flour
  • 1/2 tsp baking powder
  • 120 g dessicated coconut
  • 350 g (pear) fruit mince, recipe in Festive Flavour, or use regular fruit mince (as in fruit mince pies)

Recipe's preparation

    Base
  1. Combine all ingredients for the base speed 6 for 10 seconds

  2. Press into a lined lamington tin (approx 28cm x 18cm)

  3. Bake for 10 minutes at 180c until golden. Remove and allow to cool while preparing topping

  4. Topping
  5. Insert butterfly. Add eggs, sugar, vanilla to bowl and combine speed 4 for 15 seconds. Remove butterfly

  6. Add remaining ingredients. Mix speed 4 for 5 seconds. 

  7. Spread mixture on top of pre-prepared base. Bake for 25-30 minutes 180c until golden in colour and set. Allow to cool in tin before cutting into bars or bite sized pieces. Dust with icing sugar once completely cool.

Tip

The pear mince recipe is from the Festive Flavours cookbook. This Dream Bars recipe uses approximately half the quantity that you get from that recipe. There is another recipe for Fruity Pear Mince Baby Croissants which calls for half a batch of this fruit mince, which you could use the remainder for, or just make a double batch of this recipe!

    Closed lidI used to make this often many years ago, and in a moment of nostalgia, searched to see if someone had bothered to convert it for the Thermomix. Thank you!
    This is my third batch in 7 days, as my family and friends have confirmed its popularity by the rate is disappears from the plate! I've only managed to eat one slice of it so far!

  • Delicious.  I made a double

    Delicious.  I made a double batch, used a lamington tin.  After about 10 mins cooking, I sprinkled over chopped pecan nuts.  Continued cooking, but took much longer (probably as double batch).  This was so quick and easy, used bought fruit mince.  No more baking fruit mince pies for me, this is much less work and a wonderful recipe.  Thank you.

    Hmmm, delish.  I found that the Pear Mince recipe in the Festive Flavour cookbook made just over 1kg. I froze my leftover Pear Mince. Great recipe, thanks for sharing  Cooking 7

    OMG this was divine!! My family all loved this recipe and I will definitely be making again. Better than the steamed Christmas puddings that I made the pear mince for lol. Thanks for sharing  tmrc_emoticons.)
