Easy Chocolate Fudge Cake

Cake

  • 100 g unsalted butter, cubed
  • 2 --- Eggs, Large
  • 200 g raw sugar
  • 120 g dark chocolate
  • 280 g self-raising flour
  • 1 tsp bicarbonate of soda
  • pinch salt
  • 2 tbsp cocoa powder
  • 250 g buttermilk

  • 50 g unsalted butter

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Make the Ganache;
  1. Grate chocolate, 10 secs, speed 9

  2. Add remaining ganache ingredients to bowl and cook, 5 mins, 100 degrees, speed 1

  3. Once melted, mix 15 secs, speed 4. Place in separate bowl for later

  4. To make the cake;
  5. Not need to wash the bowl. Place chocolate into bowl and grate, speed 9 for 10 secs

  6. Melt 5 mins, 50 degrees, speed 1

  7. Scrape down bowl and repeat (5 mins, 50 degrees, speed 1) until chocolate is melted

  8. Add all remaining ingredients and mix 30 secs, speed 6

  9. Pour cake mixture into prepared 20cm springform tin and bake for approximately 50-60 mins at 180 degrees, or until firm in the centre

  10. Once cooled and ganache is of spreadable consistency, cover the cake with ganache and refrigerate until ready to serve

    Wow what a nice but easy cake. I made it for a small family celebration and people asked for seconds! I added a few milk and white chips which came out nice in the cake.

    I ate this at my friend's place. It was yum. She cut the cake in half and added fresh cream in between. She also used 50 dark and 50 milk choc for the ganache.

    Quite simple & very tasty. I had just made butter (from the Basic Cookbook) so used the buttermilk from that - just the right amount. For some reason the melting of the chocolate for the ganache worked fine but not for the cake itself so might try on a slightly higher temperature next time.

    I did not have buttermilk and used regular full cream milk. Very easy and tasty. Thank you for sharing tmrc_emoticons.)
