Easy Sweetened Condensed Milk Biscuits (The Hungry Cook)

250 g Butter, softened
225 g caster sugar
150 g sweetened condensed milk
1 level teaspoons vanilla extract
310 g plain flour
1 & 1/4 level teaspoons baking powder
1/4 level teaspoons salt
350 g dark chocolate, roughly chopped
12 g Cornflakes, (Optional)

  For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

Heat the oven to 180°C

Line an oven tray with baking paper.

Insert butterfly whisk.

250g butter softened 225g caster sugar 30 sec/speed 4until light and creamy.

150ml sweetened condensed milk 1 teaspoon vanilla extract 15 sec/speed 5

Remove Butterfly Whisk.

310g plain flour 1 & 1/4 teaspoons baking powder 1 & 1/4 teaspoons baking powder 1/4 teaspoon table salt 20 sec/speed 2

350g dark chocolate, chopped or chocolate chips Optional: 1/2 cup chopped nuts or cornflakes 20 sec//speed 2

Roll the dough into tablespoon sized balls and place on a tray 4cm apart. The Hungry Cook usually does 6 on each tray.

Immediately use a cookie cutter to quickly shape cookies when first out of the oven.
