Erika's Cookies

  • 250 g Butter
  • 180 g brown sugar
  • 100 g white sugar
  • 2 eggs
  • 1 1/2 level tbsp vanilla extract
  • 1 tsp salt
  • 1 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • 300 g flour
  • 600 g chocolate

Recipe's preparation

  1. Preheat oven to 180°C and grease 2 baking trays.
  2. Place butter, granulated sugar, light brown sugar, vanilla extract, eggs, flour, bicarbonate of soda and salt in mixing bowl then mix 30 sec/speed 5.
  3. Add chocolate (chunks or chips) and mix 20 sec//speed 3.
  4. Shape into small rounds (approx. Ø 4 cm) and place onto prepared baking trays about 5 cm apart to allow room for them to spread.
  5. Bake for 8-10 minutes (180°C) until golden and still slightly soft. Cool for 5 minutes before transferring to a wire rack to cool completely. Once cool, store in an airtight container until ready to serve.
