Feijoa and Ginger Loa

  • 80 g crystalised ginger
  • 75 g Butter
  • 350 g feijoa, peeled and chopped into pieces
  • 1 sugar, 1 cup
  • 1/4 water, 1/4 cup
  • 1 level teaspoons baking soda
  • 2 eggs, lightly beaten
  • 375 g self-raising flour
  • 1 level teaspoons baking powder
  • 1 level teaspoons ginger powder, powder
  • 1/4 teaspoons salt

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Weigh 80g crystallised ginger into TM. 3 seconds/speed 6.
    2. scrape down sides and repeat if necessary. Put ginger into a separate bowl and put aside.
    3. Add 75g roughly chopped butter to TM bowl. Melt butter 3 minutes/37 /speed 1
    4. Add 350g of peeled and chopped into small pieces feijoas
    5. Add 1 cup sugar
    6. Add 1/4 cup water
    7. Simmer 12 mins /100 / stir mode
    8. Add 1 tsp baking soda.
    9. 10s speed 3 to mix.
    10. leave the mixture for at least 20 minutes to cool
    heat oven to 180 degrees.
    11. Add 2 lightly beaten eggs
    12. 375g SR Flour and add ginger which has been set aside
    13. 1 teaspoon baking power
    14. 1 teaspoon ginger powder
    15 1/4 tsp salt
    16. turbo pulse for 1 second, three times until mixed. dont overmix.
    17. pour into greased and lined loaf tin and cook 180 30-40 mins, or cake tin for 40-45 mins or muffin trays for 20mins . check cooked.

    leave in tin to cool for ten minutes before removing. great moist tasty loaf and especially good served with walnut and honey butter.
