Flourless Almond, coconut and vanilla cake

  • 200 g Butter, Chopped
  • 4 x 60g eggs
  • 1.5 tsp vanilla extract
  • 1/4 tsp almond essence
  • 180 g almond meal
  • 60 g Desiccated Coconut
  • 250 g caster sugar
  • flaked almonds, For decorating

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    How to:
  1. Preheat the oven to 180C
    Grease a loose base flan or springform pan. Around 20-23cm.

    1. Melt the butter 3min/50°C/sp3. Leave in the bowl to cool.

    2. Add the eggs, coconut and sugar 30secs/sp4

    3. Add almonds, coconut and sugar, 20secs/sp4

    4. Pour the mixture into the prepare tin, smooth the top and sprinkle with some flaked almonds.

    5. Bake for around 40 minutes or until cooked when tested.

    6. Cool in the pan before dusting with icing sugar.

    7. Serve with a generous dollop of sour cream.

    We had to work to interpret the recipe as ingredients were mentioned but not included in the preparaion/method however it all worked out in the end and the cake was very nice. We served with a berry coulis and cream as a dessert. Thank you for the recipe
