Fruit cake

  • 1 apple, peeled, cored and cut into peices
  • 1 Pear, peeled, cored and cut into peices
  • 125 grams Butter, cubed
  • 100 grams Coconut sugar
  • 250 grams SR flour
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon Ginger,ground
  • 1 teaspoon mixed spice
  • 90 grams Sultana's
  • 40 grams dried apricots, Diced

Recipe's preparation

    Fruit cake
  1. Preheat oven to 180 degrees. Line a loaf tin.

  2. Cook apple and pear 10 min/100 degrees/speed 2

  3. Add coconut sugar and butter. Mix 20 seconds/speed 4

  4. Add SR flour, eggs and spices. Mix 30 seconds/speed 5

  5. Add sultanas and dried apricots. Mix 10 seconds/speed 4

  6. Pour mixture into prepared tin. Bake for about 45 minutes

    This recipe is delicious! Thank you for sharing. Having the fresh fruit in it makes it so much better than the old tried and true. I will definitly make it again.
