GF Banana, Choc, Chia & Goji Muffins

Ingredients

Muffin Mix

  • 100 g Coconut oil (or butter)
  • 80 g coconut sugar (or raw sugar )
  • 1 egg
  • 450 g Ripe Banana's
  • 60 g yoghurt (any is fine)
  • 1 teaspoon vanilla extract
  • 200 g GF plain flour
  • 1 teaspoon Bi-carb soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 20 g chia seeds
  • 20 g Mesquite or Protein Powder, (optional)

Nut, Seed & Berry Mix

  • 50 g slivered almonds
  • 50 g Dark Choc Chips or Cacao Nibs
  • 50 g Goji Berries

Recipe's preparation

    Method
  1. 1.Set oven to 180degrees. Line cupcake trays with papers. 

    2.Place coconut oil & sugar in bowl & blend 20sec/speed 5.

    3.Add egg, broken up banana's, yoghurt & vanilla & blend 6sec/speed 5. Scrape down sides of bowl and blend again 6sec/speed 5.

    4.Take out MC. Place a thermoserver or medium bowl on top of TM lid to weigh all dry ingredients; GF plain flour, bi-carb, cinnamon & salt, mesquite or protein powder. Remove bowl & set aside. Remove TM lid.

    4.Place a sieve over top of TM bowl & sieve in dry ingredients using spatula to assist. Scrape down sides of bowl if required.

    5. Add chia seeds and mix in wet & dry ingredients 15sec/speed 5. 

    6. Add slivered almonds, choc chip or cacao nibs, & goji berries. Mix Counter-clockwise operation15sec/speed 5. Stir the mix using the spatula to incorporate nuts, choc & berries throughout.

    7. Spoon into paper cases. Bake medium size muffins on middle shelf & mini muffins on bottom shelf for 35-40mins. If making larger muffins, increase cooking time by 5-10mins or until skewer comes out clean. Mini muffins take between 15-20min if baked on medium shelf.

Tip

Any combination of nuts,seeds, dry fruits etc can be substituted to equal a total of 150g. Ideas would include sunflower seeds, pepita's, coconut, pinenuts, chopped almonds, walnuts, currants, cranberries, sultana's etc. Freezes really well & can be warmed in varoma or microwave from frozen & served with cream as a dessert pudding.

Perfectly sweet & healthy superfood snack to pep you up for breakfast, snack or supper. Also great for school lunches (if you swap nuts for seeds).

If you don't usually have mesquite or protein powder they'll be a little heavier but still delicious & kind of healthy.
