GF SF Chocolate Pumpkin Cupcakes

Ingredients

120 g

Cake mix

  • 120 g SR GF FLOUR
  • 120 g almondmeal
  • 250 g 100% pumpkin, (pureed)
  • 20 g unsweetened cocoa powder
  • 1.5 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1/2 tsp cinamon
  • 30 g Xylitol 'sugar', I don't like it too sweet
  • 1 egg
  • 25 g oil of your choice, I used coconut oil
  • 200 g Milk of your choice

Recipe's preparation

    Preparation
  1. Preheat oven to 180ºC and spray muffin tin.

  2. Add the following ingredients to the TM:- GF flour mix- Unsweetened cocoa powder- Pumpkin - Baking powder- Baking soda- Sea salt- Xylitol 'sugar'- Cinnamon

    Blend on speed 6, 4 sec

  3. Add remaining ingredients - Egg- Oil- MilkBlend on speed 6, 4 secs - Just until all the dry bits are blended together

    Fill the (pre-oiled) muffin cups nearly to the top.

    Bake 20 mins or until toothpick comes out clean from the center of the cupcake. Oven temperatures vary so be sure and keep an eye on them!

     

    Cool on a rack (completely) before decorating.
