Giant Smartie Cafe style cookies

Ingredients

20 piece(s)

Biscuit Dough

  • 1 teaspoon Vanilla essence or extract
  • 2 --- eggs
  • 500 grams SR flour
  • 250 grams Butter
  • 375 gram Condensed milk., (1 Tin)
  • 200 grams sugar, (white or Raw)
  • 1 package Smarties

Recipe's preparation

    Dough Preparation
  1. Preheat oven to 180 degrees celciusCream together butter, sugar and condensed milk  - speed 4/5 30 secondsAdd vanilla and eggs and mix  - speed 4, 1 minute

     

  2. Add SR flour and mix speed 3 - 30 seconds

  3. Scrape down the bowl

    Add wet ingredients and mix well - speed 4 - untill combinded 

  4. spoon out mixture onto clingfilm and roll into a large log 

    (this is optional you can just leave in the bowl to chill however this makes it easier to use later)

  5. chill in the fridge for at least 20 mins or untill ready to bake

  6. if you have left mixture in bowl ( if you roll into a log proceed to next step - Roll large balls that fit the palm of your handPlace onto the baking sheet allowing plenty of room to spread (about 6 per tray)Lightly dust the B2B small rolling pin and roll over biscuits to flatten slightly

  7. if you rolled the dough into a log - slice off pieces of dough approx 2 - 3cm thick and place on a lined baking tray ( 6 approx per tray to allow for spreading)

     

  8. Press plenty of smarties into each biscuit (keep them very  close together as they will move alot and spread out when cooking) - i had about 8 - 10 smarties per cookiecompletely

  9. Bake for 10-15 mins or until they are golden in colour

  10. Cool for a few minutes before transferring to a wire rack to cool 

  11. cheer because your family thinks your awesome and yoour total cost is sooooo much cheaper than $4 a cookie!

Tip

if your mixture appears too wet you can add additional flour.

 

Remember not to add too much as the dough will firm up in the fridge
