Recipe's preparation

  1. Preheat oven to 180° and line 2 baking trays with paper or baking mats.
  2. Place butter into mixing bowl.
  3. Add brown sugar.
  4. Add golden syrup.
  5. Add gingerbread spice.
  6. Heat for 5 min/50°/speed 2 or until melted and combined.
  7. Add beaten egg and mix 5 sec/speed 3.5.
  8. Add SR flour.
  9. Add bicarbonate soda.
  10. Mix 10 sec/speed 5 or until combined.
  11. Transfer to a bowl, cover and refrigerate for 30 minutes.
  12. Roll mixture into balls (approx heaped 1/2 Tablespoon each) and place on to lined trays leaving room to spread slightly.
  13. Bake for 10-12 minutes.
  14. Remove from trays immediately and place on wire racks to cool.

Substitute gingerbread spice for your own spice mix or heaped 1/2 Tablespoon of Christmas Spice Mix from Cookidoo.

    This recipe looks nice, but I'm wondering why the need for placing the mix in the fridge for 30 minutes.
