Ingredients

Step 1

  • 120 g Butter
  • 180 g honey
  • 120 g water

Step 2

  • 170 g plain flour
  • 75 g SR flour
  • 1 tsp bicab soda
  • 1 tsp Nutmeg
  • 1 tbsp ground ginger
  • 65 g brown sugar

Recipe's preparation

    Step 1
  1. Preheat oven to 150 degrees.


    Prepare loaf tin.


     


    Add the butter, honey and water to the bowl.


    Cook for 2 minutes/90 degrees/speed 1.


    Scrape down sides.

  3. Add the remaining ingredients.


    Mix for 20 seconds/speed 4.


    Scrape down sides.


    Mix for 5 seconds/speed 4.


     


    Pour into loaf tin.


    Bake for 1 hour.


    Check with skewer; if not cooked, add 5 minutes at a time until cooked through.


     


    When cold, sprinkle with icing sugar.

    Just made this, smells amazing cooking in the oven! tmrc_emoticons.)
    I didnt have enough honey, so ended up doing 60g honey and 120g golden syrup.
    Also I used a Olivani (DF Margarine) and GF Flour so its DF & GF ... cant wait to see what its like.
