Glazed Lemon Syrup Cake

  • 450 grams plain flour
  • 1/2 level teaspoon baking powder
  • 1/2 level teaspoon bicarbonate of soda
  • 400 grams sugar
  • rind of 3 lemons
  • 250 grams Butter
  • 4 eggs
  • 200 grams buttermilk
  • 60 grams lemon juice

  • 100 grams sugar

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Preheat oven to 160C on fan heat.

  2. Grease and base line a 25cm, deep round cake pan, or 2 loaf pans.

  3. Combine flour, baking powder and bicarb for 6 seconds on speed 6. Set aside.

  4. Mill sugar and rind for 30 seconds on speed 9.

  5. Add butter, and mix for 10 seconds on speed 5 or until butter is softened. Add butterfly/whisk and whip for 2 minutes on speed 4.

  6. Select 30 seconds on speed 3, and add eggs one at a time through the lid.

  7. Add half the flour, and mix 5 seconds on speed 3, add the buttermilk and lemon juice, mix for 5 seconds on speed 3, then add remaining flour and mix for 10 seconds on speed 3.

  8. Pour mixture into prepare pan, and bake in preheated oven for 50 minutes or until cooked. Cool on rack over tray.

  9. Lemon Syrup
  10. Comine lemon juice and sugar, and cook on 90C for 2 minutes on speed 2.

  11. Pour hot syrup over hot cake, and brush the syrup that falls onto the tray around the sides of the cake.


  12. Glaze
  13. Mill sugar for 30 seconds on speed 9. Add the lemon juice and mix on speed 5 until combined.

  14. Pour glaze over cooled cake before serving.
