Gluten Free Apple Cinnamon Quinoa Bars

  • 110 g unsweetened apple sauce, see Basic Cookbook
  • 60 g egg whites (from 2 large eggs)
  • 100 g Maple syrup
  • 2 heaped tablespoons nut butter (or 20g butter for Nut Free)
  • 1/2 teaspoon Vanilla Paste
  • 90 g quinoa, cooked and cooled
  • 120 g oats (GF)
  • 1 tsp baking powder (GF)
  • 35 g flax seed
  • 1 tsp cinnamon
  • 150 g apples, cored and quartered
  • 45 g chopped walnuts (or sunflower seeds for Nut Free)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180 degrees. Line 9X9 pan with baking paper.
  2. Mill flax seeds 10 sec/speed 9. Set aside in small bowl.
  3. Place apples in bowl and chop 3 sec/speed 5. Transfer into small bowl and set aside.
  4. Place apple sauce, egg whites, maple syrup, nut butter and vanilla paste into mixing bowl. Mix 10 sec/speed 5. Scrape sides of bowl with spatula.
  5. Add quinoa, oats, baking powder, milled flax seed and cinnamon. Mix 10 sec/speed 4. Scrape sides of bowl with spatula.
  6. Add chopped apples and nuts (or seeds) and mix 10 sec/
    reverse/speed 4
  7. Pour into lined pan and smooth flat with spatula.
  8. Bake 30-35 minutes until bars are golden brown and firm to touch. Cool in pan then slice into bars and store in refrigerator for 3 days or freeze to keep longer.

Tip

The Nut Free version with the sunflower seeds and butter is great for school lunch boxes.

This is great as a breakfast bar or snack and is low in sugar. Rice malt syrup could be substitued for the maple syrup.
