Gluten Free Chocolate Brownies

  • 125 grams unsalted butter, roughly cubed
  • 125 grams dark chocolate, cut into pieces
  • 210 grams brown sugar
  • 25 grams rice flour
  • 25 grams GF corn starch
  • 40 grams cocoa powder
  • 1/4 tsp GF baking powder
  • 1/4 tsp salt
  • 3 eggs, lightly beaten
  • 100 grams Chopped walnuts
  • icing sugar, for dusting

Recipe's preparation

    Method
  1. Preheat oven to 160o fan forced or 180o

    Grease 24cm x 30 cm baking tin and line with baking paper

    Grate chocolate 10 secs/Sp 10 and place in separate bowl
    Melt butter 40 secs/50o/Sp 4
    Add melted butter and sugar and mix 15 secs/50o /Sp 5

    Add flour cornflour, cocoa, baking powder and salt and mix 30 secs/Sp 3, using spatula to clean sides of bowl

    Add lightly beaten eggs and mix well 30 secs/Sp 3. Clean down sides of bowl with spatula

    Add walnuts and combine 20 secs/Sp 2 reverse

    Pour mixture into baking tray and cook for 30-35 mins

    Remove from oven and allow to cool in tray

    Carefully remove from tray when cool and slice up into pieces

    Dust with icing sugar and serve or store
