Gluten Free/Dairy Free Fig, Almond and Yoghurt Cake

Ingredients

8 portion(s)

  • 180 grams raw almonds
  • 200 grams coconut oil
  • 100 grams Rapadura
  • 100 grams GF SR Flour
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 100 grams coconut yoghurt
  • 8-12 Figs, fresh

Recipe's preparation

  1. 1. Mill Almonds on Speed 7 for 10 Seconds

     

    2. Add Coconut Oil, Rapadura, GF SR Flour, Eggs, Vanilla and Coconut Yoghurt and Mix on Speed 5 for 10 Seconds.

     

    3. Pour Batter in a greased and lined 24cn Springform tin.

     

    4. Cut Figs in Half and then arrange on top of the batter pressing down gently.

     

    5. Bake in 180 degree oven for 45minutes or until cooked through.

     

    6. Cool slightly before removing from tin

Tip

Serve with coconut cream or ice cream. A drizzle of honey over the top is delicious too as this is not a sweet cake.

    Very nice. Took longer to cook in my oven which happens often. Juice leaked out of spring form pan over my oven so beware. Will be making again as my tree is full.

    Of course you can substitiute the coconut yoghurt for greek youghurt if  you don't need it to be dairy free, you can also sub the coconut oil for butter if you want tmrc_emoticons.)

    I believe that Quirky has a good coconut yoghurt recipe if you want to make your own as well.

    Hi I've made your cake twice already but am wondering about using greek yogurt instead of coconut yogurt. Have you tried this? Do you think it would work? I can't always find coconut yogurt.
