Gingernuts

  • 300 grams raw sugar
  • 110 grams Butter (Softened)
  • 2 teaspoons ginger
  • 1 teaspoon baking soda
  • Boiling water, Small amount, enough to dissolve ginger and baking soda

Recipe's preparation

  1. PREHEAT OVEN TO 180 degrees.

     

    Add sugar and softened butter to thermomix bowl. 

    Mix speed 5 for 10 seconds.

     

     

  2. In a coffee mug combine ginger, baking soda and dissolve with a small amount of water. Add mixture to Thermomix bowl with sugar/butter mixture. 

     

     

  3. Add Golden syrup to bowl and mix speed 5 for 5 seconds. 

     

     

  4. Add S/R flour and mix speed 5 for 10 seconds. Scrape down sides of bowl and mix for a further 10 seconds on speed 5. 

    (this may need to be done another time until all ingridients are combined) 

  5. Turn out dough onto thermomat or slightly floured clean and dry bench. 

    Roll into a ball and separate into 2 pieces using the spatula.  

  6. Roll 1/2 the dough into a long "snake" around 2cm thick. 

     

    Using the spatula cut of both ends and eat them tmrc_emoticons.;) 

  7. Use the spatula to cut the down the length of the "snake", approx 1.5cm wide.

    (repeat the above steps with the 2nd lot of dough once you have your first lot in the oven baking) 

  8. Place onto baking tray lined with baking paper and flatten with a floured fork , leave room as they will spread as they cook. 

  9. Bake for 10 - 15 minutes (fan forced oven, 15 - 20 mins in conventional oven). You do need to keep an eye on them as they do burn easily. 

  10. Remove from oven when golden brown. You may need to leave them on the tray for a bit as they are very soft when first taken out.

    These were really tasty, though I did find I had to turn the oven down to stop the bottoms from burning.  Mine cracked a lot more than the picture, but they were yummy just the same.
