Dough

  • 100mls full cream milk
  • 250mls sour cream, at room temp
  • 2 eggs, at room temp
  • 1 sachet instant dry yease, 2 1/2 teaspoons
  • 4 1/2 cups plain flour, sifted
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 125 grams Butter, soft
  • 1 teaspoon Cinnamon and Sugar, for sprinkling

  • 1/2 cup Butter

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation

    Dough
  1. Place milk and yeast in mixing bowl and heat 2mins/37 degrees C/speed 2. Add flour, eggs, sugar, salt and butter.  Scrape bottom of mixing bowl to incorporate milk mixture into flour mixture.  Knead 6mins. Once dough well combined, transfer into a large bowl, cover with thermomat until doubled in size.  Add flour to dough if too wet. Once risen transfer onto a thermomat and pinch off small fist size balls and set aside.  Using a rolling pin roll out circles from the balls of dough, spread with softened butter, sprinkle with cinnamon sugar mix and a few sultanas.  Make a small cut from centre of circle to outer and fold one side over making the shape as shown in the photo.  When all buns are made, wet top of buns with small amount milk and sprinkle small amount streusel on top and bake until lighlty browned +_ 15 to 20 mins.

     

     

     

     

  2. Streusel Mixture

     

    Mix all ingredients for streusel together in bowl on speed 4, for 6 seconds, no need to clean bowl after making dough.

    I can't see when to add in the sour cream, so I added it with the milk and yeast. Is this right?
