Healthy Lunchbox Slice

Ingredients

  • 50 g Butter
  • 110 g raw sugar
  • 150 g honey
  • 200 g pumpkin seeds/pepitas
  • 1 --- crushed weetbix
  • 50 g rolled oats
  • 90 g sultanas
  • 100 g Self Raising Flour

Recipe's preparation

  1. Pre-heat oven to 170ºC and line a slice tray

  2. Melt butter, raw sugar and honey 3 min/80ºC/speed 1

  3. Add all other ingredients and mix 20 sec/counter-clockwise operation/speed 4 or until well combined

  4. Press into prepared tin and bake for 30 min, allow to cool and cut into small pieces

Tip

This is a quick easy and tasty lunchbox snack which is healthy and guilt free

Is also nice with a mix of pumpkin and sunflower seeds instead of just pumpkin seeds

Try mixing it up with the dried fruit, is nice with dried cranberries, dried blueberries and/or dried apricots as well

For a more naughty version try adding 60g of dark choc chips to the mix as well
