Jakel's Moreish Caramel Mud Cake

  • 200 grams unsalted butter, room temperature
  • 250 grams white chocolate, melts or squares
  • 180 grams brown sugar
  • 315 grams hot water
  • 85 grams golden syrup
  • 20 grams brandy, optional

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Add butter, chocolate, sugar, hot water, golden syrup and brandy to bowl, melt 3 min/60deg/sp2
  2. Add flour to the melted butter mixture, combine 8-10sec/sp3. Do not over-mix, flour should be just combined.
  3. Add eggs and vanilla, combine 8-10sec/sp3
  4. Pour into a lined 20cm round cake tin or slice tin and bake at 150 degrees Celsius for 30-40 minutes. Avoid over cooking, cover with foil and allow to cool in tin.
  5. Decorate as desired. Dark chocolate ganache works well with this cake, use BCB recipe and adjust chocolate:cream depending on the thickness of ganache required.
